- Ambil Sabayon.
- Siapkan 3 butir telur.

- Buat sabayon terlebih dahulu. Siapkan di wadah tahan panas : 3 butir kuning telur, 1 cup gula pasir, dan 4 sdm susu cair. Aduk hingga rata menggunakan whisk. Lalu, di panci panaskan air.. masak adonan telur di atas air yg mendidih (seperti melelehkan cokelat).. aduk aduk hingga gula larut, warna berubah agak pucat, dan adonan terasa hangat. Angkat..
- Setelah uap nya hilang, masukkan 250 gram mascarpone cheese ke dalam adonan sabayon tadi. Aduk menggunakan whisk hingga rata.
- Di wadah lain, kocok whipped cream menggunakan mixer hingga menjadi kaku. Tips : whipped cream harus dalam keadaan dingin saat dikocok, jangan kocok terlalu lama.
- Campurkan adonan sabayon+mascarpone dengan whipped cream. Aduk hingga rata menggunalan spatula. Lalu masukkan ke piping bag (opsional).
- Susun lady fingers dengan cream di wadah. Celupkan lady fingers ke larutan kopi terlebih dahulu. Lalu lapisi dengan cream. Lapisi lagi dengan lady fingers. Dan terakhir lapisi dengan cream..
